In response to your questions:
Being Chinese and vegan for 12 years, my first bite of cheese could have been really bad. I was surprised to discover that I wasn’t lactose intolerant. The cheese was delicious, and I was hooked.
Ah, the pungent world of cheese (don’t say the s-word). The Bedford Cheese Shop is wonderful. The cheesemongers there are passionate and know their stuff. Definitely worth a visit. I saw the “smells like proctologist’s finger after a long day at the office” sign way back in 2004, so maybe they’ve since revised their messaging. Closer to home in Washington D.C. be sure to check out the Cowgirl Creamery. Besides selling cheeses from all over the world, they also make their own cheese (not on-site unfortunately).
Oh don’t store your cheese in plastic wrap.
