
Question from a reader: “Do you know any where here to get supplies, rennet, or bacteria for making cheese. I live in Dubai and want to start making my own but can’t even begin to imagine where to start to look.” — Cory
Dear Cory, our office in Dubai is filled with delicious Hyper Cheese but we agree with you it’s sometimes hard to find supplies to make cheese here. We mainly concentrate on making fresh cheeses like ricotta, paneer, and crème fraîche since they’re rarely made locally. The harder cheeses are easier to come by in Dubai because they’re aged and can travel better. Just this week we feasted on a tomme de savoie and an oldie but goldie mimolette. Besides being hard to source, making your own fresh cheeses makes sense because the ingredients are readily available. It’s much tastier and cheaper than buying imported “fresh cheese”!

not exactly what i was meaning, im a chef, so i know how to make fresh cheeses like the ones you have mentioned. what i am looking for is actual cheese making supplies.

Thanks for the recipes! I’m not a chef (but a good hone cook) so I stuff like this. I’m not in Dubai either but it’s hard to find cheese in Asia too!
